I use godaddy shared hosting and they have been pretty stable. I run a small board, 40 users or less at max normally so I haven't put them to a real test, but they've done well so far. The customer service, while not always the smartest, has always been instant, this is something I require with my new host.
I am looking to switch to a similar plan with a new host that can support that latest version of vbulletin since vbulletin 3.6 requires php version 4.3.3 or later and godaddy only gives up to 4.3.1 on shared hosting plans.
My plan specs are below:

There is no reason NOT to use http://liquidweb.com {snip} I have done so much migrations while I was outgrowing servers, and these guys are insane in speed and knowledge.

Plus, unlike other hosts, you can actually CALL LW, and get someone on the phone who can solve your issue.
I chose them after I noticed several other 'big boards' who were hosted by them.
I use siteground.com have no problems at all and if server dose go down which is not very often it is fixed fast, and they have very good customer service and fast support times
I'm sorry but siteground.com is terrible. To add to your problem of server outages, they keep their servers overloaded and incapable of doing anything sensible.
What encryption said basically describes Host Gator. Host Gators server load im not sure of however, but backups time out so easily. Also they need a photo id that is official like a passport or drivers license to enable SSH (Which is reasonable, i can understand why..) but just so you know, if your not willing to give and you want SSH... dont use Host Gator, also Host Gator is terrible on the support side of things, they dont even use the live chat, you will wait 15 minutes just to be told to use the email and it will take like 3 hours or maby even days just to get a very simple problem fixed, took me 2 full days to get wilcard subdomains enabled, the guy didnt even know how to do it and he told me that, i had to tell him how, to me, that is pathetic.
