It's the code for everything under the category header title. (Eg. Forum, Last post, replies number, therad number etc.)

I didn't create those templates, best to ask a vb.com if nobody here knows of it's existance.

Because in vBulletin each category is really just a forum that allows no post, hench the no_post templates. The reason you have level 2 templates is the Depth of Forums setting the the vbulletin options. if it only went to one level you couldent have the category over a few of your forums effect that most users use.
If you wanted you could set the Depth of Forums setting to 3, make a level 3 post and no post template. add a subforum to one of your forums and it would show on the main page, this is not recomended due to performance reasons.
heres a screenshot of what i mean.
the Level 1 testing forum is using the level1_post template and has no parent forum.
the catgory is using level1_no_post and its subforum is using level 2_post.
