Admin CP -> Styles & Templates -> Edit Templates -> Highlight Template -> Restore / Delete (The bottom button - there are 5 in total on the right).

I never know there's an option to delete a specific template. I only do that in phpMyAdmin.

You can also just click "Revert Template".

You can delete custom templates by clicking the revert link. Default vBulletin templates can not be deleted with the revert link, the revert link returns them to their orginal state.
