Notifications and Emails - Issue with remote/SMTP email

I have SMTP working appropriately and my emails are going through a Hotmail account (was using GMail, but they quickly cut it off as spam even though it was typical vBulletin notifications )

Now - the problem I have is this:

Each notification email looks like it is coming from the administrator account even though it is truly going through the Hotmail account. When you look at the 'From' address, it shows my admin's email address. When I look at the email source, I can see that is in the 'From' field, but it is really coming from Hotmail.

I've searched and searched in vBulletin settings, but can't find where to change this

This did NOT happen with GMail, BTW.
