Is there some place in vbulletin to track unregistered/guest visits? Or will I need some kind of hack? Something that will let you view ip address and what they were looking at, etc. Have some suspicious activity and want to look into it...

You should have access_logs for your site. If you don't know where they are, ask your host.

use Paul's hack for starters, its really good and very customizable. just search "guest visits" in the correct version forum.
