On my skin called Red Coal, How do you make the categories closer. On the NFL, NBA etc sections, they are making the forum go off the screen?

You need to ask the style designer for help with that. We don't know what modifications were made to the templates or css whereas the designer does know that and should be able to easily point you to the correct area to modify.

Then why is the default skin, vbulletins skin the same way? I didn't change anything?

Your modification for the sub-forums is doing that. Either make less columns or shorten the names of the sub-forums.
