Is their a setting / mod that allows me to not display certain subforums.

Maybe the ones I choose, or ones for a whole board.

I don't believe this is a default vBulletin feature, however you might want to try Cyb - Sub-Forum Manager which should prove satisfactory.

Sorky's sub-forum manager also does this well. Both hacks are good.
