Due to a miscommunication between one of my staff members, 2 categories were mistakenly deleted. Not so long ago I took a backup of the forum SQL through cPANEL.... I was wondering is there any way that I can use this to restore specific categories from a backup?

No, you should either keep the current data or restore the entire database.
