Is there a modification that I can install that let's me keep individual memebrs from editing posts rather than an have to take it away from the entire usergroup?

You could create a new usergroup based on the Registered Users group and then make any changes to the newly created group.

I have done this. Called it restricted members. Changed various settings.
Make this the primary group for the member in question.
Works fine.
