That's not AJAX or JAVA.

Just find what CSS class is used in the template and change it.

it's not in any of the stylevars at all.

Sure it is, it's called "vbmenu_option".

In main CSS it's caled "Popup Menu Option Row" and is the second box up from the "Additional CSS Definitions" box at the bottom.
