On every forum it shows (1 Viewing) or whatever the current number is. I would like to know how to remove that.

In your AdminCP, expand vBulletin Options, then select vBulletin Options -> Forum Display Options (forumdisplay) -> Show Users Browsing Forums select No and click Save.

That will switch off all users browsing in Forum Display.
