How do I go about disable the img tag for user sigs and across the board as a whole?

check the vbulletin options in your ACP, there's a checkbox for it to enable/disable bbcode in signature.

I know that you can take it off in signatures, user notes, and other things, however, i have not found an option that allows you to take it off across the entire board.
