Is building the search index something that you need to turn off your forums to do? I'm on a VPS so I don't know how my server resources will handle it. Should it be fine to leave the server up while I rebuild the index?

Turn off your forums while rebuilding, or you run the risk of db corruption, and terms not being indexed.
