Is there an easy way of populating a list like this? Or if not, can someone give me an example of what the SQL query to populate this might look like?

You can find that info in your acp/users/search for users/ View all new registrants

That doesn't give me exactly what I want but the Search For Users page does fix my query as you can filter according to last login date - so thank you!
