Until you familiarize yourself with vBulletin, I highly suggest you do not delete the products -- just disable them. If you have deleted a product, make sure you have deleted their associated files. When you delete a product it does not delete the products files and in some cases this can lead to problems. Typically the problems occur due to permission bitmasks or "xml" files -- if you do not understand what I am talking about, then just do not delete products for now.
If you have added or deleted a product already then the datastore has already been rebuilt. Make backups and make small changes. I would just get the existing board up and running and then make small changes while you are learning. Do your learning on a local test board (a copy of your production board).
