Log In Problems/500 Internal Server Errors
Since the initial install of the live version of my site I've been having log in issues where I constantly have to delete my cookies for the site as well as the cache to be able to log in. Now the site is throwing 500 Internal Server errors left and right and I have no idea what's going on.

Disable the hook system via config.php & report back.

If its not a hack/addon issue & disabling the hook system, then i would suggest looking at your server logs.
Provided you have access to them, id track them via ssh using tail, then grep your ip. ie tail -f /usr/local/apache/logs/error_log | grep "youriphere" |

I managed to solve the previous issue but now I can't seem to get the plugins system to re-enable. I've commented out the define('DISABLE_HOOKS', true); line, I've completely removed it and I even download the config.php.new file and completely started from scratch again but for some reason it just won't turn back on.

Sounds more like a server cache error!
