I want to completly remove all post options in a forum with subforums in it, but not in the subforum itself, so theres no post new topic option or anything

ON whatever forum you do not want people to be able to post in simply go to your forum manager and edit the forum you want go down to Posting Options and set Forum is Open to No.

This will stop people posting in the forums that you do not want them to.
