There is the possibility to eliminate some forums from "What new"?

Index New Posts in Search Engine = No

That would stop them from being indexed all together, and still return them from what's new (it uses a different searching method).

You have to manually edit the url to remove them from the search.

If running 4.2.2 go to Navigation Manager in the what's new tab edit it in Target URL change it to search.php?{sessionurl}do=getnew&contenttype=vBFor um_Post

Should you do as Force suggested, then you can use this mod, https://vborg.vbsupport.ru/showthread.php?t=305977 to exclude forums from showing up.
