In the admincp if you go to usergroups then click admin permissions you can set what each admin can and can't do. Hope this helps.

For what reason do you not want them to have full access ?

Well, for one, do you really want your administrators to have the ability to email members with the click of a button?

I have suggested individual permissions for admins/mods - but Marco said it would be extremely hard to do and require a lot of edits. I would use it.

usually, instead of admins, you retrograde them to Sub-Admin role, and as you are the new owner of a site, you have to apply YOUR rules...

The way I do it is limit they permissions so they can't mess anything major up. Like they don't have access to styles, vboptions, plugins, things like that.
I also would remove them from config.php if they are in there as super admins
