Need a little help I'm customizing my forums, And wondering

The part where the topic is "Main Category/Helix-RSPS" The background for that? What is the stylevar?

Also where it says Forum/Forums/Welcome to the forums What is the stylevar for that?

Well you've made the container background transparent so it's going to be the same color of the font. You could edit the forumhome template and add in a style="color:#ffffff;" to the wrapper or wrap it and add that styling with css etc.
