a) What would you recommend I use for creating automatic Back Up. I basically want the Back Ups to be made every X amount of days I choose by it's self.

Are you planning on backing up files or just the database. I only back up my DB, because all the files are replacable. I use this script and simply run it from the ssh prompt, creates a backup of all your DB's in a cPanel like folder structure.

Doing a full file system backup, needs another script.

i) If I have a couple of MOD's installed on a forum. When the database is backed up automatically. Are the MOD's also included?

Doing DB backups will backup all the mod settings. Doing a full filesystem backup will backup the files needed for the modifications if there are any.

I have seen a MOD or something before where it adds an table into a website. You can log in using your forums ID and password and then the forum stats get displayed on the website etc.

There is TopX stats, and stats in admincp. I'm not sure which you're talking about.

re there any MOD's that you would recommend to me to use for any type of forum? Basically MOD's that help all forums in general?

Not without knowing what type of forum you're running. I do recommend not going modification install happy and just installing every "cool" thing you see. But thats your choice.

i) Also any good SEO MOD's. I am already planning on using vBSEO when I have the cash. Anything else I may need?

vBSEO is about the best one, it pretty much handles everything any software can handle, with a few tempate edits as well.

d) Are there any guides that tell and suggest what you change the settings to in the admin panel? Maybe a guide that tells you what not to do?

Are you looking for vBulletin Optimization Tips? Or just things not to change in the admincp?
