They're running RC1 at vbulletin.com. The main reason they haven't upgraded here, I believe, is because of all the customizations to this site. I'm sure they want to put off redoing those as long as possible.
I started developing the site in my sig with 3.7 beta 5. I went live with it with beta 6, and upgraded to RC1 yesterday. Not a single problem have I encountered. If you're starting a new board from scratch, you'd be best served by going with 3.7, in my opinion, especially if you plan on doing a lot of template modifications. It will save you some work down the road.

vBulletin.com is running it because it is their product. And it is central for testing on a large scale environment. vBulletin.org has several reasons.
vb.org does`nt even use 3.7 so that should tell you something. If u go for the rc version then be prepared to have to keep on updating it and fixes bugs which they may find.
Na, the reason why vB.org does not use vB 3.7 is because they have done "mass hacks" here to the site. So it's best for them to wait for gold version before updating. Otherwise they could be constantly making changes with each RC release. leading up to Gold
I'm waiting until a few of the modifications I use are either clearly going to be updated or abandoned/replaced. Event Forums & RSVPs are just too necessary to my site atm Although I reckon the new WoWevents calendar would do for the raiders.
