I'll give my opinion about the hosting company I use, Advanced Internet Technology, Inc - ait.com.
You have complete access to your server files, telnet, ftp. I use the Business 3 Plan, so I don't have to be concerned about disk space and bandwidth. On this plan, I'm allowed one MySQL database, which has grown. Because I am familiar with the apache server files, I can modify my conf files as needed. I've only been using them since March, but no hacks yet.
The down side. Either my site goes down, or the MySQL server is down once very nearly every weekend. Sometimes it's brief, sometimes an hour to 3 hours. Not all their techs are as knowledgeable as I'd like, though the admins are pretty good. They have a ticketing system and phone support. My experience has been if I call in, I could be on hold for a few minutes to about 10-15minutes. Via phone, my problem will be fixed pretty quickly.
Having said this, I tolerate the downtime because of the space/bandwidth I get, and for the total access I get to server files. It's fair to say that generally speaking, most hosting companies have their problems.
I am not employed by AIT. I know some people have had issues with them. I like access. That's what I get. Just food for thought when you're looking for a home for your site.
If you've used them and think their crap, that's okay. I know worse companies. My point is, don't attack me for my opinion - it is just my opinion based on my personal experience.

Well, I'll tell you who NOT to use.... Westhost.com. My site is always down... they keep telling me things like, it's the software I use. I guess vbulletin isn't compatible with them.
Just moved to a server provided by this company and so far I'm very pleased, especially with their support. They haven't gotten their site updated to reflect the selling of servers, I ended up emailing the owner about a server.

Awesome, so far so good, I'm loving it. I have alot more freedom with this company and I am now reselling services to help make some extra cash to pay for site stuff.
Hostmonster.com is the best shared hosting provider I've used so far. Been using them since it was 3GB/3TB storage/bandwidth and never had any issues with downtime, been running some fairly resource-heavy scripts with no problems, and they've recently gone up to 15GB/15TB storage/bandwidth. I have all but one domain (the free one included with hosting) through 1and1, however. Have so far found no other places offering com/net/org for $6.99 / year.
