You can find the manual by looking at the nav bar at the top of the page for quick links > vbulletin manual. From there go to Stylevar and it will show you illustrations with corresponding variables. The variables will allow you to make all the changes to colors, text, etc.
Not sure why your colors aren't changing - do you have more than one style chosen and are you applying the changes to the correct style? I know it can get confusing if you are using several diff styles.
