How do I disable this feature? I want to always show every forum and every thread in the forum no matter how long it has been since someone posted there.

Admin CP -> Forums & Moderators -> Modify -> {forum name} [edit] -> Default view age -> 1000

Repeat this for each forum.

If you have access to your db you can do all at once with the query:

UPDATE forum SET daysprune = 1000
