Why not just edit the bbcode_code template and add that to the top of it?

So you want to show a different message all the time whenever someone uses the code tag? Can you do a str_replace on it? I'm really not understanding exactly what you are trying to do so it's hard to recommend something for you to do. If you are replacing something in the postbit though, I'd use a postbit_display_* hook.
