When I set my forum up I remember making it so users automatically subscribe to threads they post in. I can't for the life of me find where I set this now, does anybody know where it is?

If you search "subscriptions" in vbotions you'll find it

admincp > vboptions > User Registration Options > Default Registration Options > Automatic Thread Subscription Mode

I had tried that searching but looked for "subscribe" instead of "subscription" DOH!
