I was just wondering how safe is it to give your SSN and other personal information to Google adsense? You guys think anyone else would be able to get their hands on it?

Haven't had any problems yet.

But yes it is possible for others to get their hands on it, just like its possible for them get their hands on it from any where else.

It's taxable income, you have to put your tax information in. I'm sure it's as safe as the internet can be.
