This is the first time I've tried updating one of my mods since this site's 'overhaul'. I can't seem to figure out how to rename the mod (the actual thread title). I'm sure I'm overlooking something simple, so a point in the right direction would be appreciated.

On the thread listing, double click just next to the text. Be careful not to click on the link of the mod.

Depending on how long ago your modification was released, you may actually have passed the title editing time limit - If you have a version number in your Release Thread's title it is usually better to remove that part of your title if you can still edit your thread title as there is an editing time limit
