Is it possible to do a bbcode that will produce a table in the post, it will give you the option on how many columns and rows you want, and allow you to add text to it.

It's also possible to add table code in the BB code ACP. But I haven't seen any that isn't potentially nasty for your board. You need some checks to make sure that closing tags are used, or your topics will get screwed.
