How to change default settings?

I have two default settings that I'd like to change.

1. I don't want Save a copy of this message in your Sent Items folder. to no longer be automatically checked. The inboxes get full quite fast due to this being automatically marked.

2. When I delete messaged I would prefer the default to be to physically remove the message versus a soft delete since I never use soft delete.

If anyone can guide me that would be wonderful.
