HELP! How do I change my default template?

I am all messed up because I don't understand Replacement Sets and Template Set. I want to change the default look of my site to another one that I have been working on. How do I do this?

I thought that if I made my default not user selectable and made the one that I wanted default user selectable, but the board still picks the default look even though I set it as not being user selectable.

Can somebody please help me. I am sorta inbetween looks right now and the current site has a few things of the new look and it's kinda messed.

PLEASE HELP!
