Can anyone tell me how to (if possible) change the image vbulletin3_logo_white.gif which is in the printable version of a thread, with my own custom image.

You can create your own image, or find a free one on the net. Then name the file with the same name as the one you want to replace, in this case name it vbulletin3_logo_white.gif. Then FTP your new image to the same directory as the current image, overwriting the default one that's there.
