I'd like to find a way to log all logins to user accounts, based on IPs. Is there an easy way to do this?

I think we would need to know more about what problem you're having before answering this question. Or if you aren't having any problems but just want to do this for academic reasons.

No problems, but I'd like to have a more detailed logging system. If I could, I would almost like to consider logging page views on certain forums, but that would get to be a little too much.

Following the 'similar threads', it looks like you have your wish. But I see absolutely no good reason to collect this data, and I bet if you told your users you were logging all their activity they wouldn't like it.
