php5 is out of beta, and is considered stable by the makers of php, but many web hosts will not agree with this, php5 breaks many many things and will take a while for all current scripts to be updated with php5 in mind. I've never had any issues running php 5.0.4-dev on my windows machine, but personally I run 4.x.x on all of my nix boxes as their is no real reason to go to 5.x yet.
