I'm a guy who's experienced Plesk, cPanel and Ensim Pro...and Rackshack servers at that, lol. I've found that I keep going back to cPanel servers for their features, constant updates, and ease-of-use for both the customer and the server admin. Ensim Pro lacks updates, and if you want to be stuck with PHP 4.2.x for another few months, go with Ensim. Upgrading php manually on Ensim breaks something in it, I can't remember what it is anymore.
Plesk = bad...mmkay. No really, it's really bad...really really really bad.
It really depends on your skill level when it comes to server management, while in SSH, knowledge of linux, etc. and also what your control panel preferences are...
