If by some obscure chance an admin did go nuts, I could still go into phpmyadmin and easily get my admin status back and remove theirs.

I totally agree with you on this one.

I have only one other Admin on my site and I trust him 110% (and I have a hard time trusting anyone). He helps with some hacks when he is around, which isn't too often because of his job.
