Just to add, if it's actually one of the pre-bundled vB5 "themes", then the stylevars aren't available by default.
You need to create a "Child" style off the chosen theme, then you will see the stylevar option for it.
You can then, if you wish, have only that child style active and set as default, ordinary users will not then see the style selector (though admins always will).
