For not wanting them to be able to have access to every forum

Admin > Forums & Moderators > Forum Permissions.

Then click super moderator in forum permissions and check no for forums you do not want them to see, post, reply or whatever else.

Also in usergroup, go to super moderator and de-check "Can Moderate All Forums (is Super Moderator)"
