Looks like the text color for both of those are from the template userprofile.css:

.userprof_content {
    background-color: #FAFAFA;
    background-repeat: repeat;
    color: #FFFFFF;
}

the #FFFFFF is making the text white. I would just change userprofile.css, but I've seen other people add new CSS in additional.css, so maybe that's the right way to do it. (I'm not a CSS expert or anything).

Edit: oh...actually it's a style variable called content_text_color, so I guess the correct thing to do is change it from the Style Variable Editor.

Edit again: ...except that content_text_color is likely used somewhere else, which is probably how it got set to white in the first place. In that case I'm not sure of the "correct" way to fix it.
