If you use cpanel you should have an option to run a backup... backup the database and the file system, download the archive files its creates... Open them to confirm all the files and data are there... be especially sure about the database- open the SQL file and scroll to the bottom, make sure it doesn't end in mid-line... Once you have these backups you should be able to reupload and reimport onto another host.

Ideally you would upload to the new host before deleting/closing your account at the old host just to be sure it worked, but if that's not possible then manually checking you have all the data is your only choice.
