At the moment, there's no way of hiding stats from the leaderboards page without actually disabling that entire points type.

That page is getting a revamp in the next version, I'll definitely look into adding the actual points.

Levels aren't something you set up, but as for example Achievements you could add Posts >= 1, 5, 10, 15, 25, 50, 100, 250, 500, 1000.

It would be against vB.org rules to include this inside vBA itself, but we'll work on changing our website to reflect these differences in the future.

Upon first rebuild, where it reads all your past posts etc, you will indeed have stupid %s. We're going to work on a system to avoid this happening.
The activity target is rebuilt daily, and it takes the amount of points gained by users who gained more than X points in the past week (where X is a value you can set in the admincp options) divided by the number of users who gained more than X points in the past week.
This value then becomes 100% of the weekly activity target.
Divide by 7 to get 100% of the daily activity target.
Multiply by 4 to get 100% of the monthly activity target.
