Because of how a lot of the features are integrated with each other, simply doing that can cause problems and design headaches. It's usually much simpler to remove options, and it also gives people more features in Lite, and a better idea of what the product is capable of.

99/100 users would rather have a feature with limited options, than have it removed completely =P If we went with your suggestion I don't think people would be happy haha.
