set the permission of the category to hide for the particular group that you don't want to see it.

For example in the ADMIN CP - under Usergroups see Forum Permissions. If you want to hide a category from Un-registered users and users who haven't logged in - click on the appropriate usergroup and select edit next to your forum category and set Can View Forum to no.
