well the whole point is that the app communicates with the plugin installed on your site to load only the data it needs (like the list of forums, thread text etc). in order for the app to know which sites have the required plugins installed, a network is maintained. as part of that, you can fill in some info like title and an icon.
it cant be a standalone for individual forums because it would be a terrible waste. if each site had its own app it would mean way too much for the iphone user to pick the right one, you would have an unendless list of apps to maintain, and it just makes more sense that the one app can visit any sites on the network. not to mention that only a couple existing users would get the single-site version and you would have to pay repeatedly to get a different site's clone.
i do hear though that the next app version will allow you to choose which mode to start when you open up the app - which could be your favorites page, and thus list the site(s) you go to more deliberately without having to search around for them every time. in effect "branded" to just a single forum, without having to do the mess outlined above.
besides, iphone users curious about the app might not even know about your site, but find it on the network. do you want new visitors in addition to existing ones, or just the existing ones?
