Rice pudding, or as it seems to be called locally pudding rice, can be found in plastic tubs with other puddings and yogurt in the dairy section of most supermarkets in California. If you have a Vallarta (hispanic supermarket chain) nearby with a taqueria inside, you can probably find it freshly made. If your supermarket has a Hispanic Foods section, you might be able to find canned rice pudding.
We primarily eat brown or wild rice in my house. White rice has had it most of its nutrients milled out of it. Wild rice isn't the same as standard rice but is a close relative and native to North America.
If you like rice than you should try Quinoa and Amaranth. Both are native to South and Central America and were staple foods in that region until the settlers came from Europe and changed local diets to wheat and rice. These will most likely be found in the health food aisles of stores but could be found with other dried grains and legumes.
