I've just repeated the steps you described:
- installed LDM on a vb database
- created a new user profile category and field
- added a value
- checked that I could see it in the user profile
- uninstalled LDM
- killed LDM
- went back and checked the user profile field manager
- everything is ok
What version of LDM did you have installed when you removed it?
