I'm a huge freak on sub-forums. Have about 330 boards on my site.

What I believe you're looking for is in:

VBulletin Options > Forum Listing Display Options

I believe you want "Depth of Sub-Forums" - 2(?)

If that's not the right amount, mess with the numbers in that area, (those 3 options) - this will give you a lot of flexibility with your sub-forums
