Select Forums & Moderators -> Forum Manager.
Edit the forum you want to do this.
Change Default Sort Field to Thread Title
Change Default Sort Order to Ascending or Descending as required.
Click Save
Repeat step 2 - 5 for each forum you want to do it to.
