For the first question re the postbit....

AdminCP > vBulletin Options > Style & Language Settings > Use Legacy (Vertical) Postbit Template > Yes

I'm not 100% sure but the second question about the text should be cleared up here:

ACP > Styles & Templates > Style Manager > select style > All Style Options > Input Fields Change the color there and I think it will change the input text in reply and posting boxes.
